Ingredients (10-12 portions)
Plain flour (00) | 200 grms |
Caster Sugar | 200 grms |
Baking powder | 1 tsp |
Baking Soda | ½ tsp |
Oil | 90 ml |
Milk | 180 ml |
Eggs | 3 |
Vanilla Paste | 1 tbsp |
Mashed banana | 1 cup |
Walnuts | ½ cup |
Chocolate Chips | ½ cup |
Almond Flakes | handful |
Method:
- Gather all dry ingredients (flour, sugar, baking powder & soda)
- Add oil, milk, eggs, and vanilla paste, and mix well using a hand mixer, until smooth (1-2 mins)
- Add mashed banana, walnuts, and chocolate chips and mix well
- Pour the batter into a lined bread tin and sprinkle some flaked almonds for extra crunch
- Bake for 55 mins @ 170° C fan setting in an oven
Tips and Other Notes:
- Don’t bother about sieving the dry ingredients
- Nuts and chocolate chips are optional, you can change them with anything else as well. Make sure the replacement doesn’t add more moisture to the batter
- You can reduce the amount of sugar as banana already adds sweetness to the bread
