Banana Bread: Fruity, nutty & cakie …

Planning for an indulgent three-course breakfast? Look no further and bake this banana bread as breakfast pudding! Technically  it’s a cake in a different shape but trust me – it’s very delicious and light.

Recipe

Ingredients (10-12 portions)

Plain flour (00) 200 grms
Caster Sugar 200 grms
Baking powder 1 tsp
Baking Soda ½ tsp
Oil  90 ml
Milk 180 ml
Eggs 3
Vanilla Paste 1 tbsp
Mashed banana 1 cup
Walnuts ½ cup
Chocolate Chips ½ cup
Almond Flakes handful

 

Method:

  1. Gather all dry ingredients (flour, sugar, baking powder & soda)
  2. Add oil, milk, eggs, and vanilla paste, and mix well using a hand mixer, until smooth (1-2 mins)
  3. Add mashed banana, walnuts, and chocolate chips and mix well
  4. Pour the batter into a lined bread tin and sprinkle some flaked almonds for extra crunch
  5. Bake for 55 mins @ 170° C fan setting in an oven

Tips and Other Notes:

  1. Don’t bother about sieving the dry ingredients
  2. Nuts and chocolate chips are optional, you can change them with anything else as well. Make sure the replacement doesn’t add more moisture to the batter
  3. You can reduce the amount of sugar as banana already adds sweetness to the bread
