Oil | 2 tbsp |
Turmeric | 1 tsp |
Salt | 1 tsp |
Chat Masala | 1 tsp |
Basmati Rice | 1.5 cups |
Ghee | 1 tbsp |
Staranise | 1 |
Green Cardamom | 4 |
Cloves | 5 |
Chopped onions | 1 cup |

Carrots | ½ cup |
Salt | 1.5 tsp |
Garam Masala | ½ tsp |
Coriander powder | 1 tsp |
Red chilli powder | 1/3 tsp |
Red peppers | 1 cup |
Boiling water (2 X rice) | 3 cups |
Garden pea | 1 cup |
For serving: Serve hot with papad, mint chutney, and cumin yoghourt
Method:
- Coat paneer cubes with oil, turmeric, salt, and chat masala. Pan-fry it lightly to get some colour on the paneer and set aside
- Soak rise in tap water for 30 mins
- In a pan heat ghee, and add whole spices (Star anise, cardamon, and cloves)
- Once the aroma starts coming, then add onions, potatoes, and carrot
- Add dry spices (salt, garam masala, coriander powder & red chilli powder)
- Add soaked and drained rice and mix well to coat every single grain in the oil masala
- Finally add red peppers and 3 cups of boiling water (2 times of dry rice quantity)
- Bring it to a boil, cover it with a lid, and simmer for 8 mins
- Turn the heat off and keep it covered with the lid for another 10 mins
- Now add fried paneer and cooked garden peas. Mix well and cover again with the lid for all the flavours to infuse thoroughly for another 5 mins
- Serve hot with sides of cumin yoghourt, papad, and mint chutney
Tips and Other Notes:
You can use any vegetables, just make sure that after cooking they retain the texture and do not become mushy
– Instead of panner you can use any other cooked meat-based protein as well
– Water ratio is 2 times of the dry rice and should be reduced if you are using many vegetables as they release a lot of water as well
