Red Lentil Soup: Warm & Hearty …

As they say, there is no bad weather. There is only bad clothing, or you can have this warm & hearty red lentil soup to bring some sunshine to your day!

Recipe

Ingredients (Serve 4)

Red Lentil 1 cup
Oil 2 tbsp
Garlic 4 cloves
White Onion 1 cup
Carrots  1 cup
Veg Stock cube 2
Salt 1 tsp
Cumin Powder ½ tsp
Mixed herbs 1 tsp
Paprika ½ tsp
Chopped tomatoes 1 tin
Water 5 cup

Method:

  1. Wash and soak lentils for 15 mins in warm water
  2. Heat the oil in a pan and add garlic, onion, and carrots
  3. Add stock cubes, salt, cumin powder, herbs, and paprika
  4. Mix well and add tomatoes, soaked lentils, and water
  5. Bring to a boil and simmer in a covered pan for 15-20 mins
  6. Blitz with a hand blender for a smooth consistency
  7. Drizzle some olive oil and garnish with feta and parsley
  8. Serve hot with some toasted bread

Tips and Other Notes:

  1. Cover the pan while simmering
  2. Before you blitz, make sure that lentils are fully cooked, otherwise, they won’t give a smooth texture to the soup
