Red Lentil Soup: Warm & Hearty …

Recipe
Ingredients (Serve 4)
Red Lentil | 1 cup |
Oil | 2 tbsp |
Garlic | 4 cloves |
White Onion | 1 cup |
Carrots | 1 cup |
Veg Stock cube | 2 |
Salt | 1 tsp |
Cumin Powder | ½ tsp |
Mixed herbs | 1 tsp |
Paprika | ½ tsp |
Chopped tomatoes | 1 tin |
Water | 5 cup |
Method:
- Wash and soak lentils for 15 mins in warm water
- Heat the oil in a pan and add garlic, onion, and carrots
- Add stock cubes, salt, cumin powder, herbs, and paprika
- Mix well and add tomatoes, soaked lentils, and water
- Bring to a boil and simmer in a covered pan for 15-20 mins
- Blitz with a hand blender for a smooth consistency
- Drizzle some olive oil and garnish with feta and parsley
- Serve hot with some toasted bread
Tips and Other Notes:
- Cover the pan while simmering
- Before you blitz, make sure that lentils are fully cooked, otherwise, they won’t give a smooth texture to the soup
